AJI AMARILLO SAUCE

Ingredients
- 2 tablespoons aji amarillo paste (see recipe)
- 1 small shallot
- 2 cloves garlic
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup queso fresco
- 1 tablespoon tomato paste
- 2 tablespoons lime juice
- Salt and pepper to taste
Preparation

Add all ingredients to a blender or food processor and process until smooth.
Season with salt and pepper, to taste.
Transfer to a bowl and refrigerate until ready to serve.
Serve as a dip or a topping for roasted veggies or meats.
