TUNA FLANS

These little tuna flans are soft, flavorful, and perfect with a salad, as an appetizer, or packed in a lunchbox.

Ingredients

  • 8-oz canned tuna in water, well drained
  • 3 eggs
  • 2 oz grated cheese
  • 1/2 cup heavy cream
  • 1 tbsp flour
  • 1 tbsp mustard
  • Salt, pepper
  • Parsley or chives

Preparation

  • In a bowl, whisk the eggs with the heavy cream. Add the flour and mustard, then season with salt and pepper. Mix until smooth.
    Flake the tuna and stir it into the mixture. Add the grated cheese and finely chopped herbs, then gently mix.
    Pour the mixture into lightly greased muffin tins.

    Bake at 180°C (350°F) for 20 to 25 minutes, until the flans are well risen and lightly golden.

    Serving suggestion: These flans are delicious both hot and cold. Perfect for a light meal, a casual dinner party, or to take anywhere.

    Small variations:
    • Add diced bell pepper or zucchini
    • Replace the cream with fromage blanc (a type of fresh cheese) for a lighter version
    • Also perfect with lemon tuna
